How to Prepare Khao Soi
- Toast the cardamom and coriander seeds for 2 minutes. Set it aside.
- Add 1 tablespoon of oil to the hot pan and saute the chopped turmeric, ginger, and shallots.
- Pound the toasted seeds and the dry pepper in a Thai krok, a stone mortar and pestle. Soak the dry pepper in a little hot water to soften it.
- Also pound the sautéed ingredients. Sprinkle in some salt while pounding it to bring out moisture.
- On medium heat in a pan, add a quarter cup of vegetable oil. Add the chili flakes and a pinch of salt. Swirl it around and let it simmer for 3 minutes. Your chili oil is done. Transfer to a clean bowl and set it aside.
- To cook the khao soi, add a cup of coconut milk to the pot and add the turmeric mixture. Stir and simmer for 1 minute.
- Add the chicken and stir gently. Add the rest of the coconut milk and the coconut sugar.
- Stir in the fish sauce. Cover the pot and let it simmer for 45 minutes.
- Blanch half of the noodles and fry the other half to achieve the crispiness. Once half of the egg noodles are blanched, sprinkle some oil to prevent them from sticking together.
- Place some blanched noodles on a plate. Add the chicken sauce, then layer some of the fried noodles. Sprinkle the chili oil.
- Garnish with chopped cilantro, scallions, lime, pickled mustard greens, and shallots.
