  1. How to Prepare Somali's Bariis

    1. Rinse the rice and parboil it for about 8 to 10 minutes.
    2. Put the oil on medium heat in a big cooking pot. Add the sliced onions and saute for 2 minutes until golden brown. Scoop them out of the oil and set them aside.
    3. Now add the diced onions to the oil and saute for 30 seconds. Add the diced tomato and the chicken stock.
    4. Add the cardamom pods, cinnamon stick, and the crushed coriander and garlic. Stir them gently.
    5. Scoop in the ground cumin and remove the cardamon pods at this point. Add a quarter cup of water and stir.
    6. Add the parboiled rice on top of the sauce in the pot. Don’t stir it. Put the raisins in hot water to soften them. Layer them on top of the rice. Layer the sauteed sliced onions too.
    7. Add the food coloring and cover the pot with a clean kitchen towel, then a lid.
    8. Allow it to steam for about 5 to 10 minutes. 
    9. Then gently mix.
