Chelo Kebab’s origins date back centuries to Persian royal courts, where skewered meats were grilled and served with rice during lavish feasts. Over time, the dish spread throughout the Persian Empire and became an integral part of everyday Iranian culture. By the 19th century Qajar dynasty, Chelo Kebab was already established as a symbol of Persian identity and culinary pride.

  1. How to Prepare Chelo kebab

    1. In a bowl, mix the minced meat with the egg. Add a teaspoon of black pepper, turmeric, salt, and crushed chillies.
    2. Finely grate the onion, sieve out excess water, and add the grated onion to the beef. Mix all the ingredients. After mixing them thoroughly, please keep them in the refrigerator for at least 2 hours.
    3. After two hours, take a handful of the mixture and ball it and wrap it around a skewer to make kebabs. Put your hands in a little water while spreading the beef on the skewer to avoid it from sticking.
    4. Then, make a pattern dividing the long kebab into small portions on the skewer. 
    5. Heat your skillet, sprinkle with some oil and place the kebabs on it. Grill on both sides and turn every 30 seconds. It will take between 3 minutes to 5 minutes for the kebab to cook.
    6. To prepare the rice, wash and add water and allow it to simmer on low heat.
    7. Add a quarter of saffron to a quarter cup of water. Stir it and leave to dissolve for 15 minutes. 
    8. Once the rice is ready, scoop some into a bowl, sprinkle some saffron mixture, and mix evenly.
    9. Serve some of the plain rice on a plate and garnish with the saffron rice. Place the grilled kebab beside the served rice.

Tips for Making Chelo Kebab

  • You can use BBQ or bake the kebab in the oven for 20 to 25 minutes.
  • Spray the kebab with oil before grilling to give a good shine on top.
