How to Prepare Irish Stew
- Season the beef with salt and pepper. Stir-fry the beef until it's brown on all sides. Once slightly cooked, set aside.
- Sauté the onion and garlic in the pot until golden brown. Add the bacon and stir-fry until brown. Add the chopped carrots and celery. Scoop in the flour and stir. Add the Guinness beer, tomato paste and the broth.
- Add the beef back into the pot. Add the bay leaves and thyme.
- Cover the pot and allow the sauce to boil for at least 2 hours on low heat.
- Serve with Irish soda bread or boiled rice.

Tips for Making Irish Stew
- Add potatoes as desired 30 minutes before the sauce is ready.
- You can mash some of the cooked potatoes in the sauce to thicken it.
- If you want the sauce thin, add more broth.
