How to Prepare Guatemalan Pepián
- Open the chilies up and remove the seeds.
- Slightly roast the tomatoes, onions, garlic, and chilies.
- Wash and combine the chiles, tomatoes, onions, and garlic in a pot, then boil on high heat for 20 minutes.
- Place the whole chicken in a pot, sprinkle with salt, and cover with enough water. Boil it for 30 minutes.
- Once the chicken is cooked, debone it and remove the skin as desired.
- Blend the cooked tomatoes, onions, garlic, sesame and pumpkin seeds. Sieve them into the chicken broth. Put the potatoes and string beans into the chicken broth and boil for 15 minutes. Taste and adjust the saltiness.
- Once the potato is ready, the soup is ready too. Serve the soup with boiled rice.
- Garnish with the cilantro.

- You can shred the chicken once it's cooked without removing the bones and skin as desired.
- Also, use other parts of the chicken if you don’t have a whole chicken for this recipe.
